Post Panellets - amazing Spanish cookies with almonds+pine nuts!

Remember the amazine cookies I told you about in the cookies thread? Well, I posted a question on an Israeli food forum (in Walla), asking if anyone knows what they're called and has a recipe, and after 2 hours I got a picture and a recipe!!!! Woo hoo!!!

These cookies are small, round, soft and amazing, and I suggest them to everyone! I'm going to make them this week maybe ...

(The recipe in Hebrew can be found here)

Ingredients:

500gr grind almonds
500gr sugar
2 middle-sized potatoes
1 egg
1 package of Vanilla Instant Pudding (the powder)
1 teaspoon Vanilla extract
---
1 scrambled eggwhite
roated pine nuts / almonds / nuts (to cover)

Cook the potatoes (with their skins) until they are soft. Peel the skin and mash the potatoes until smoothed.
Mix rest of ingredients in a bowl, add the mashed potatoes, mix well.
Create 3 cm balls, dip each ball in eggwhite and then with one of the covering ingredients, put on a baking paper. Bake a few minutes in an oven pre-heated for high temperature, until cookies are slightly brown, take out immediately and cool.

don't eat when the cookies are hot, only after full coolness ...

you can change some of the grind almonds for coconut slightly grind

I totally want to try those, but I have to ask... do you taste the potatoes at all? Rolling Eyes And, how is the texture? Like, are they hard cookies, or softer cookies?

1. We DO have vowels in Hebrew. But some vowels can be pronounced differently, that's why we have the pronounciations as well

2. You don't taste the potatoes AT ALL!!!! No one guessed there are potatoes in there!! The texture is soft, delicious, and VERY VERY GOOD!!!!! Don't be freaked by the potatoes, really, they're just there to hold all the dry ingredients together and make a soft cookie Smile Very Happy Very Happy
